regarding hot peppers: Scotch Bonnet are my fave. A stop at some janky outdoor "pit" in Jamaica for jerk chicken/shrimp was one of the best things I've put in my mouth. Thank you scotch bonnet
I scored a nice win this past week (or at least it feels so) when I went to the store for our annual NY day meal - roasted pork & sauerkraut with mashed potatoes. Not sure of the lineage of this dish but growing up in south-central PA, this was an every year thing. Quite possibly the easiest dish to make as well. Boneless pork loin roast with a bunch of kraut in a pot or dutch oven. Roast for a bit until the meat falls apart and serve over mashed potatoes
My win came in the form of finding a huge pork loin (boneless) at the local store for under 20 bucks. It was one of only a few left so I grabbed it. It had a decent fat-cap left on which I love when browning but I quickly realized that I would only need about a quarter of it for my meal. I cut and vac-sealed 3 nice chunks for another day. I'll probably filet and grill one piece as they'd make nice chops. I love the feeling of spending a little and being able to stretch it. 4 meals for 20 bucks = win
