Look into making a chili sauce, salsa or something like that.
Fresh sauces are usually better. But a garden bounty is why canning and freezing was created....more or less.

So much this, chilli and peach, and chilli and apricot and with them it doesnt matter if you get them in a tin and not off the orchid at [redacted] in [redacted] with [redacted] and the plumbs too!.

The bartender at [redacted] showed me an awesome thing to do with rhubarb:
Strawberry Rhubarb Shrub
It is a syrup you make where the vinegar balances the sweetness of the strawberry and brings out the flavour of the rhubarb. You can mix it with seltzer or make a collins by mixing it 1:1 with vodka and then an equal amount of soda water and serving over ice. Very refreshing!

Decided to go with Apple & Rhubarb.
Everything seems to have gone to plan.

I did a mango and peach chutney, great with curries.

My Mom used to make rhubarb jam. I always thought she used too much sugar. I used to chew on the stalks as a kid. She would do a whole gob of it, saving only some of her yield for a rhubarb pie or two. She didn't use any pectin. I think it would have been better if she'd have pureed it, but still it had a pleasing chunky texture. She'd cook it on the stove with some salt, too much sugar and with me stirring almost constantly, she'd finish it with lemon juice after it stopped foaming.
She would then bottle them and put them in the pressure canner. Seems like they lasted years, but that might just be from a kid's perspective.
Glad yours turned out well. I bet the apple will give it good texture and flavor.

I never cared for straight Rhubarb anything. I do like strawberry Rhubarb pies though, but I prefer straight strawberry jam.
We grew Rhubarb when we moved into the house I built, but we didn't use it for anything. It died off in about five years. I make strawberry, cherry, and peach , and raspberry jams. Made grape jam once, the wife liked it, but I didn't care for it and neither did the kids or their families. The jams we do make are all freezer jams.
I have tried lots of different things made from Rhubarb, I tell people they are good, but honestly I am not being honest. It is not like I dislike it, I just don't particularly like it. I prefer things made of other things. The only way I like zucchini is in Zucchini bread. I probably like that because it is a laxative.
Some people say they love Rhubarb, do they really love it or did they convince themselves that they loke it or say they love it because they want to fit in with others that do?

My gran and grandpa grew it in our back garden.
We used to get a cup of sugar and a stock of Rhubarb.
She grew all sorts, from apples to gooseberries, strawberries, just about any root vegetable.
Can almost smell the summer days gone by.

I love the stuff and always have, but each to their own.
Convincing yourself you love something seems rather whack imho.
You either "love" something, or you dont.
