Depends on where you go and what part of the city you're in.  Pat's/Gino's in South Philly was always wiz.  Dalessandro's was always provolone and sauce.  I always preferred American, lol.

Other than that .. provolone was my favorite.

I was making cheesesteaks for dinners last week. I had no cheese whiz unfortunately but I did have lots of thick'ish provolone.

Peppers and onion and shaved ribeye. Once it started to char a bit 2 slices of the cheese chopped into it. Shaped to fit in the deli fresh roll. 2 more slices on top. Made some garlic mayo for the bread, spread it on heavy and top the meat and cheese.

Give it a minute to melt, scoop and flip over, 2 more slices of provolone on top of that and cover to melt. Served with cheese tots (colby jack).

Fat mans dream.

We've always been South Philly and Center City.
Always Whizz .. although they did do American if asked.
But you got that feeling that they were judging if you did ....  Lol
