As for cauliflower, I watched non-keto taste testers with pizza crust/dough and they all liked the cauliflower pizza the best, so I'm thinking of experimenting with pizza dough using cauliflower. I also have kept some keto diet habits which work well for my lifestyle. It's all about what works for you.

I suppose I'm more of a "cup half-full" person than you; I consider this to have been a great success, having lost 40 lbs.
To fairly reply to your AI list of side effects that "could" happen with a ketogenic diet, we would have to contrast the side effects that "could" happen with being extremely overweight. Those particular effects are well-documented and a commonality exists among the majority of overweight people.
Moreover, you listed "Long Term" possible effects. Nowhere have I read the Keto Diet as being prescribed long-term. It is, after all, a diet, and thus a temporary change a person chooses. It was very successful for me, and took off enough weight in a fairly painless way, such that I now have the energy and flexibility to do much of the activities I used to. Not bad! People with a "normal" fat index often don't realise how fat prevents motion, makes simple things difficult -- things you wouldn't think about, such as trimming your own toenails!
As I said, my family and I will continue to enjoy the benefits of a lower carb diet -- healthy complex carbs, with the occasional foray into the simple carbs.
I didn't care for the cauliflower crust for pizza. Weird texture, imo. To each their own. I prefer either the fathead crust or almond flour crust. I like a thin crust pizza. Thanks for your response!
