But the freaking hen starts producing testosterone and looking, acting, and sounding like a rooster after her working left ovary become ineffective, and her right overy becomes an internal testicle and transitions her midway through chicken life into a rooster. 

It seems all nature needs is reversed hormones for ornamental trans-animals.  Where the only thing they can't do is reproduce as their identifiable gender. 

Do those "hens" that act and look like roosters have a mental chicken disorder or did something just swap their hormones and naturally change their body and behavior?

But what are your thoughts on the phenomenon of hens transitioning to roosters when their working ovary dies and their hormones are swapped by their other gonad spontaneously turning into a testicle?

Their chromosomes dont change.

What does "biology" say natural selection is doing there?

What in nature says, "because you can no longer be a hen, now you'll look and act like a rooster." Why did they evolve that trait? 

Your scientific explanation for why that all happens is all I really want from this....
