Cheese.

We should eat more cheese.

Real cheese.

I like cheese!

There is gouda which I learned is pronounced "how-dah".

And cheddar is always good I like it sharp!

Even brie sometimes like with pears and apples.

Oh gosh I could go on and on.

I like to get cheese I haven't tried before or don't recognize the name of at the cheese cooler at the super market. They have a "less than $5" bin with little bits of ones that are sometimes quite good.

But even American cheese has its place like if you need something melty. I know that is an unpopular opinion! But real cheese is best in my opinion.

I like to get water crackers and put lots of butter on them and then use the butter to glue slabs of cheese to the cracker and have 5-6 of those as a snack!

What do you like?

Old (sharp) cheddar. In Canada easy to find. Mexico not so much.

Oaxaca! It’s like cheese strings wrapped in a ball, very mild.

Most Mexican cheeses are mild. Some melt decently some don’t at all, Asadero and Oaxaca with some Mozzarella does a fantastic Queso Fundido, it will change your life!

I love cheese too!!

Pear, rocket, walnuts, crumbled blue cheese and sliced orange salad.

Lush.

I have it with Calamari.

Love a sharp crunchy Cheddar.

Cheese is life, along with coffee (as my insanely intelligent wife says)!

Here in Canada we have Triscuits (very expensive and hard to find in Mexico) that have a few fantastic flavours. Dill, rosemary and garlic, etc. And each of these pairs awesomely with a beautiful cheddar! 

Most yummy…

Oh yes the aged cheddar with the cruncky crystals in it, so good. Any cheddar really. I like the Kerrygold 18 month aged as a go-to.

Rogue Creamery has a weird cheddar that is sort of a combination of jack and cheddar. It is very lush and can melty. I think it is called Touvelle.

They also have what is pretty much my favourite blue cheese, Crater Lake Blue:

Oh yes oh yes. And their smokey blue is very nice also oddly because one wouldn't think that would work.

I finally found a brand of water crackers in different flavours (milton's) that aren't foo-foo expensive.

I just finished a packet last night. There were two or three broken crackers at the end of the pack and I said to myself "I've lived too long to eat broken crackers" and tossed them into a ziplock bag, which I will likely throw away in a week or two. It is true though. When young I would attempt to use butter as spackle and cheese as a structural bridge to hold the broken crackers together. Fun, but now I've learned not to bother. It is better, I think?

We had some nice cheese over Christmas with some Bloody Mary pickle.

 A leafy green you put in salads or on pizza. Also known as rucola or roquette. it's kinda spicy, mustardy, nutty. Absolutely delicious!

I love Appenzeller cheese (Switzerland) and Roquefort blue cheese (France) among others.
