Well, well, well - I've been mixing ingredients to make General Tao sauce all along (but without the red pepper flakes, rather substituting a large dash of Thai mild chili sauce instead) and didn't know it.

I got a big container of red pepper flakes from a Chinese shop.  Quite hot.  Use it in my chilli recipe with red jalapenos.  With dark chocolate, but will try adding brown sugar.

Serendipity! I am running out of store-bought Thai mild sweet chili and I now find that I am having trouble finding stores that carry it, or which an online small bottle costs a small fortune, so I've been searching for DIY recipes online.

The easiest one which I will try soon is cutting up fresh red chillis (but I might try a mix of milder chillis like poblano, japapeno and red pepper flakes), garlic, vinegar (distilled white vinegar or apple cider vinegar), and sugar. That's the DIY recipe base that I found online and that I can work with, but I think I'll add chopped up cherry tomatos too and maybe experiment with cayenne too. It will be a work in progress.

Yeah, even adding a few too many red pepper flakes can quickly turn a sauce very spicy, which I do not have the tolerance for...yet. I've just developed a tolerance for the jalapeno heat level and even then I keep it tame.

Mmmm, red japapenos? Never heard or seen those!

Dark chocolate, Mmmm, 'yes'.

Brown sugar...maybe (?)

What about using menudo powder, increase the amount in order of your tolerance for spice. It may come out more like a red curry though

I looked up Menudo.  Says to use honeycomb tripe.  Barf!  Might try pork?

It wouldnt be curry looking unless you thickened it too much is what I was saying

Also honeycomb tripe is great, you're suppose to wash and scrub it first before you simmer it for 8 hours. That may be why you're barfing, its very similar to squid when its done. People also put pigs feet in menudo as well.

theres a difference between honeycomb tripe and just tripe itself. tripe is intestines, honeycomb is stomach lining, it makes an enormous difference. One is used to make sausage or panchete or tripa the other is used for menudo. Mexicans know the difference but google does not.
