Well since everyone is talking about crazy roadkill food now, and this thread is on Mississippi...

What about, Cajun Nutria Poutine? It is a Bayou Cajun Dish with a protein of invasive giant swamp rats!

Or Mississippi squirrel stew which is a traditional, slow-cooked Southern favorite featuring browned squirrel meat simmered until tender with vegetables like potatoes, carrots, corn, and tomatos. It is often thickened into a rich gravy, seasoned with Cajun spices or bacon grease, and served over rice or with cornbread.

I think they do the same thing for possum stew. Or any roadkill stew.
