Is sea salt tasting a bit less salty these days

I always use Malden salt when cooking. not the cheapest but it's my fave

Redmond Sea Salt is quite similar chemically to Himalayan Sea Salt.   Both are mined from ancient salt deposits that were formed roughly 500 million years ago, give or take an epoch.   Duh  Both are pink and chock full of more than 50 minerals  Real-Salt-Typical-Analysis-October-2021.pdf (shopify.com).   Good stuff.   Very tasty and healthy, both of them.   Himalayan mined from Pakistan, Redmond mined from near Salinas Utah.   Both pure.   ;o)

Interesting they are both pink.
And they sure taste different than even higher quality white salt
