- Peel and cut into 3/4" cubes
- Soak in a pot full of cold water for 30 minutes
- Replace water and bring just to a boil
- Let sit for 30 minutes
- Replace with cold water
- Let soak for an hour or so
- Drain and add it to the curry to finish cooking
I dunno if that did anything to the starches or whatever but I find potatoes not so great for the gut if I just cut them up and cook them in the curry directly, so I was fiddling around with pre-soaking and par-boiling and stuff to see if they turn out different.
Yeah, that's the question. The experiment left the cooling for 24 hours, but where are the studies with just plunging it into cold water for shorter times?

So, the cooling time for starched to become resistant has been nagging at me, as the scientists claim it should be refrigerated for 24 hours, while a commenter said that she just runs cooked pasta (starch) under cold running water then reheats it.
Well here's an article which confirms that it should be refrigerated for 24 hours.
Quote:Some Rules Apply- It takes many hours for simple starches to convert to resistant starches. Ideally, and for maximum benefit, pasta and rice should be chilled for a full 24 hours before eating or reheating.
- It’s important to refrigerate foods soon after cooking to avoid the possibility of bacterial growth and food-borne illness.

I am 50, I weigh 180. 6’1”. Everyone is different.
I do not eat red meat. For me I feel terrible after red meat. I never overeat even when I am hungry.
I don’t count calories but I just limit my eating.
Walking 3 miles per day at Planet Fitness helps, it’s on a treadmill but I enjoy music and it goes by fast.
Be kind to everyone!

Hi Quantum12, it's nice to see you posting here.
While I've been ill lately, red meat and other animal body parts was making me feel more nauseous. The question here is would the animal exist if not for the demand to eat it? I think not.
I am older than you and as such food choices and exercise choices become more challenging the older one gets.
Right now I am trying intermittent fasting and regular to moderate movements and walking. Along with more rare aerobic dancing when the mood strikes, which it does listening to the great music DI members post on my music thread.
The trick is to eat less, sure, but also to put the body into ketosis so that the body starts using fat for energy and not the glucose. But, the main reason I am giving my body a rest from food is to give it a chance to work on the healing processes rather than the digestion processes.
I am always looking for new research on our food because they can't seem to get it right.

Thank you kindly for this post. I was not posting because I was down in South America. I got super sick there! It was not fun!
Be kind to everyone!

Sorry to hear that but I hope you are feeling better.
I am seeing more and more stories of people getting sick (some dying) on the news, be it eating tainted food or homemade alcohol in tourist destinations, in addition to getting virus or bacterial infections everywhere.
Measles is now in the news with it seemingly starting to spread around North America.
I have decided to start wearing a mask again until the Summertime, when I hope the virus/bacteria don't spread as easily.

Some studies show that masking increases your bacterial and viral load since you are inhaling your germs all day and can lead to being sicker vs not wearing one.
Other studies show an increase rate of sickness in the COVID19 injected due to a lowered immune system as well, so my humble opinion is, that is what is driving a larger percentage of people missing work and getting sick the last few years. Just my 'uninformed' 'ludicrous' opinion, of course.
I advocate for fresh air, outdoors, and getting dirty with people daily so you are able to build up a natural immunity.
And don't eat or drink strange things that you aren't sure of.

Wearing the same dirty mask all day, yes, increases your bacterial and viral load, that is why it has always been recommended to change your mask frequently.
There is controversy with studies in regards to how the immune system actually behaves with that vaccine. The fact that they (higher percentage of medical professionals - just ask your doctor) are still saying for people to take the injection because the benefits far outweigh the negatives, makes me think they know more than we do.
Natural immunity can be built up in many ways, but breathing in virus/bacteria and now measles in heavily populated areas isn't one of them.
Just my ludicrous opinion, too.

My doctor is employed by a major research University and no longer asks about or urges me to get that injection. I think he has wised up, but unfortunately the Corporation that employs , his employer (essentially) still includes it on their robo forms.

We can only navigate our own health needs with our doctor's help or not, but ultimately it is our decision with or without research. We are all free to choose.
